Breakfast quesadillas

I wanted to make something different for hubby yesterday since we rarey see eachother. (he works midnights) I scoured the fridge and found eggs, turkey kielbasa, left over tortillas from taco night, and colby jack cheese.
A light bulb went on!
I made him a breakfast quesadilla with homefries for a late breakfast. He liked it very much and I would have to say this is going in my concoction win category.

If you would like to try them too, here is the recipe (makes 2)

3 eggs
1 serving of chopped kielbasa, sausage, crumbled bacon, or any other meat you would like to use
appx 1/2 cup shredded colby jack, cheddar, or any other, or sliced american cheese
2 tortillas (I prefer flour)

In a skillet cook your meat thuroughly then pour in your 3 eggs scrambled, until cooked then set aside
in a hot skillet coated with cooking spray on med high add your tortilla then top with your filling and cheese
Then lift up the empty side with a spatula and fold, pressing down to bond it together with the cheese

cook appx 1 min until the side that is down, becomes lightly browned, then flip do the same on that side and remove from skillet. slice and serve topped with salsa (if you wish)

They were delicious, hubby enjoyed it very much! I love cooking!
